Spanish is an important source for terms and expressions that have made their way into the English of the southwestern United States. Vocabulario Vaquero/Cowboy Talk is the first book to list all Spanish-language terms pertaining to two important activities in the American West-ranching and cowboying-with special reference to American Indian terms that have come through Spanish. In addition to presenting the most accurate definitions available, this A-to-Z lexicon traces the etymology of words and critically reviews and assesses the specialized English sources for each entry. It is the only dictionary of its kind to reference Spanish sources. The scholarly treatment of this volume makes it an essential addition to the libraries of linguists and historians interested in Spanish/English contact in the American West. Western enthusiasts of all backgrounds will find accessible entries full of invaluable information. Robert N. Smead is Associate Professor of Linguistics in the Department of Spanish and Portuguese at Brigham Young University. Ronald Kil is a New Mexico cowboy and artist who has worked on ranches and feedlots all over the West. Richard W. Slatta is Professor of History at North Carolina State University and the author of numerous books, including Comparing Cowboys and Frontiers.

Study shows, Cajuns claim to be unusually food-oriented, unusually talented in preparing of foods, and unusual in their ability to enjoy food. Cajuns' attention to their own traditional foodways is more than merely nostalgia or a clever marketing ploy to lure tourists and sell local products. The symbolic power of Cajun food is deeply rooted in Cajuns' ethnic identity, especially their attachments to their natural environment and their love of being with people, both.

We're all familiar with cowboy scenes from the Old West, with a big pot over a camp fire filled with beans or stew that Cookie (the cowboy cook) had prepared. And at the old homestead, whether you were cooking over an open fire or had the newest range to feed 20 ranch hands, the stew pot was one of the most important items in the kitchen. Nowadays, we have the crock pot. Brent Younger has taken some of the old recipes that he has come across from the late 1800s and early 1900s and up-dated them for today's kitchen (along with a few newer ones too) and created COWBOY CROCK POT COOKING. Some of these recipes would have been rustled up by "Cookie" on cattle drives and a lot of them were regular fare on the ranch. The cowboy diet was a wholesome diet. People worked long and hard; no-one cared about calories or low fat, so don't expect to see that here. Meats would have been tougher than we're used to - animals weren't pumped up with hormones and fed stuff they were never meant to eat - and slow cooking would have been the best way to make a meal tender. That said, cooking in a crock pot today is a good way to save some money because you can use cheaper cuts of meat and still enjoy a really delicious and hearty meal. Try Pot Rustler's Stew, Quick and Easy Cowpoke Chicken, or live a little dangerously and go for Old Fart Baked Beans.
